Green Chili Quiche

This one is a must make! I took one taste of this dish at a bridal shower and got the recipe right then and there. I've since served it to company and it was a big hit. Thank you for sharing it, Jessica!


10 eggs
1/2 cup flour
1 tsp baking soda
1/2 tsp salt

Blend above ingredients. Pour in a mixing bowl, then add the following:

1 pint small curd cottage cheese
1 lb. Monterrey Jack cheese
1/2 cup melted butter (I use 1/4 cup)
1 small can diced green chilies

Bake in a 9x13 inch pan for 35-45 minutes (350 degrees). Serve with sour cream and salsa. Serves 12-15 people.

I made this for our Labor Day brunch and it was delicious. There's no prep work so it takes only minutes to whip up. It would also be a good base for a breakfast casserole - add peppers, onion, potato, sausage or ham! We ate it with fresh fruit and it was very satisfying just the way it is.

I want to try this but I just want to make sure I have this straight. You don't have to make a separate dough then? It just all mixes together for the most part and then you bake it?

Just an FYI. I love this recipe and have made it several times. The last time I made it with half the butter, 1/4 cup, and enjoyed it much more. I thought the original way was a little too greasy feeling even for me and I love butter. I felt a lot better about eating it too. Just a suggestion.

So yes, this was great. I added some shredded spinach cuz I love the green and it was awesome. I also did half the butter and agree it was really good that way. Thanx again.

I had this at a Bridal Shower Brunch this weekend. They served it with salsa, chopped olives, guacamole, sour cream, green onions, etc. It was really good like that too.

Oh the possibilities! I'm enjoying this recipe more and more every time I make it. This time I still halved the butter but doubled the green chilies (7 oz.). Mmmm! Huxley said he wants to learn how to make it so he can make Mom breakfast on her special days. Great idea Hux! This is just the recipe to choose because it's so easy.
