Good Buy = .99 cent Chicken Breasts

Those in the Provo area may be interested to know that a new supermarket, Buy Low, has a opening special of boneless skinless chicken breasts for .99 cents/lb. The only catch is that you have to buy a 40 lb. box. If you have the freezer space it will save you a lot of money in the long run!

The sale runs through Feb. 3rd. I'm not sure if quantities are limited.

I have been getting a lot of questions so here are some more details as far as I know them from others. The store is in Provo on the Parkway by Movies 9 and Kid to Kid, in that shopping center. Taylor went a couple hours ago and said they have great deals on produce too. The chicken is fresh, never frozen, boneless, skinless chicken breasts with 4 - 10 lb. vacuum packed bags per box. That makes it nice for storage or sharing. The chicken sale is for today only, one per customer (or be sneaky and go through the line twice) but they run a different meat sale every week. You should definitely take advantage of the price if you're in the area.

I went and they were wiped out. They didn't give me a rain check, but said it would be on sale for the same price within the next few weeks. They weren't expecting to sell out of chicken by the end of the day, but it was real busy. So if any of you see this sell or any other great sell let us know. I love great prices...and so does my wallet.

Taylor and I got together yesterday and tried our hand at canning chicken and we were pleasantly surprised with the result - fork tender chicken! It is definitely worth it to stock up when you get a chance.

Ok, I know this comment doesn't directly go with this post, but I couldn't think of a better place to put it...

I had been thinking about home-canning meat for a while. I dabbled in Beef Stew once, and still have plenty of it's bounty :). But, all the talk you guys have about canning chicken, I HAD to do it!

So, I waited for a decent sale, and saved a coupon for $10 off any purchase. I ended up getting about 32 pounds of chicken for around $50, pretty sure it was about $1.40/lb. Pretty good for boneless skinless chicken breasts (I wanted my first go to be REALLY easy).

That Saturday, I canned my little heart out!! But, since, I have very very very much so enjoyed the blessings of doing this!!!!

I am now addicted to an extremely yummy chicken salad!! I have used it in soup (that my kids inhaled- I have NEVER seen them eat soup so quickly!!), Chicken Enchiladas- about 8 minutes from walking into the kitchen to in the oven- AMAZING!!, Chowder, and even Chicken Fried Rice last night. It's to the point that I don't know if I will be able to function without the chicken I canned!!!

When I canned it I used Chicken Stock with added Vegetable Stock- GREAT FLAVOR!!! It was the "Kitche Basics" brand, I think it might be an off-brand type company, but have seen it in a few stores.

All I have to say is: THANK YOU THANK YOU THANK YOU!!!!
